- 2 ripe pears, diced
- 4 oz Gorgonzola cheese, crumbled
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 4 bone-in pork chops (1 inch thick)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, heat 1 tbsp olive oil. Add minced garlic and sauté until fragrant, about 30 seconds. Add spinach and cook until wilted, approximately 2 minutes.
- In a bowl, combine sautéed spinach with diced pears and crumbled Gorgonzola cheese. Mix well.
- Create a pocket in each pork chop by slicing horizontally but not all the way through. Stuff each chop generously with the pear and cheese mixture.
- Season both sides of the pork chops with salt and pepper. In the skillet used for spinach, heat remaining olive oil over medium-high heat. Sear each chop for about 3 minutes per side until golden brown.
- Transfer stuffed chops to a baking dish and bake for about 15 minutes or until they reach an internal temperature of at least 145°F (63°C).
- Serve drizzled with pan juices for added flavor.
