  • 2 ripe pears, diced
  • 4 oz Gorgonzola cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 4 bone-in pork chops (1 inch thick)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, heat 1 tbsp olive oil. Add minced garlic and sauté until fragrant, about 30 seconds. Add spinach and cook until wilted, approximately 2 minutes.
  3. In a bowl, combine sautéed spinach with diced pears and crumbled Gorgonzola cheese. Mix well.
  4. Create a pocket in each pork chop by slicing horizontally but not all the way through. Stuff each chop generously with the pear and cheese mixture.
  5. Season both sides of the pork chops with salt and pepper. In the skillet used for spinach, heat remaining olive oil over medium-high heat. Sear each chop for about 3 minutes per side until golden brown.
  6. Transfer stuffed chops to a baking dish and bake for about 15 minutes or until they reach an internal temperature of at least 145°F (63°C).
  7. Serve drizzled with pan juices for added flavor.
