  • 1 store-bought or homemade flatbread (about 10 inches)
  • 1 cup creamy goat cheese, crumbled
  • 2 large yellow or sweet onions, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while it heats up.
  2. In a skillet over medium heat, heat olive oil. Add the sliced onions and sauté for about 10 minutes until soft and golden brown. Stir occasionally to prevent burning.
  3. Once the onions are caramelized, drizzle in balsamic vinegar and add fresh thyme leaves. Cook together for another couple of minutes to meld flavors.
  4. On a baking sheet or preheated pizza stone, place your flatbread. Evenly spread crumbled goat cheese over it and top with the caramelized onion mixture.
  5. Transfer to the oven and bake for about 10-12 minutes until edges are crispy and golden.
