- 1 store-bought or homemade flatbread (about 10 inches)
- 1 cup creamy goat cheese, crumbled
- 2 large yellow or sweet onions, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while it heats up.
- In a skillet over medium heat, heat olive oil. Add the sliced onions and sauté for about 10 minutes until soft and golden brown. Stir occasionally to prevent burning.
- Once the onions are caramelized, drizzle in balsamic vinegar and add fresh thyme leaves. Cook together for another couple of minutes to meld flavors.
- On a baking sheet or preheated pizza stone, place your flatbread. Evenly spread crumbled goat cheese over it and top with the caramelized onion mixture.
- Transfer to the oven and bake for about 10-12 minutes until edges are crispy and golden.
- Remove from the oven and let cool slightly before slicing. Enjoy immediately!
