- 1 cup unsalted butter (cold, diced)
- 1/4 cup ice water
- 1/2 teaspoon salt
- 1 pound ground beef or turkey
- 2 cups Yukon Gold potatoes (peeled and cubed)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon thyme
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
Instructions
- For the Crust: In a large bowl, combine flour and salt.
- Add cold butter and mix until crumbly.
- Gradually add ice water until dough forms. Wrap in plastic wrap and chill for at least 30 minutes.
- For the Filling: Preheat your oven to 375°F (190°C).
- Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash.
- In a skillet over medium heat, sauté onion and garlic until translucent.
- Add ground beef or turkey; cook until browned. Season with thyme, nutmeg, salt, and pepper.
- Combine mashed potatoes with meat mixture; mix well.
- Assembling the Pie: Roll out half of the chilled crust into a pie tin.
- Fill with meat and potato mixture.
- Roll out the remaining crust to cover the top. Seal edges by pinching together; cut slits for steam ventilation.
- Bake for 45-50 minutes until golden brown.
