  • 2 cups all-purpose flour
  • 1 cup unsalted butter (cold, diced)
  • 1/4 cup ice water
  • 1/2 teaspoon salt
  • 1 pound ground beef or turkey
  • 2 cups Yukon Gold potatoes (peeled and cubed)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. For the Crust: In a large bowl, combine flour and salt.
  2. Add cold butter and mix until crumbly.
  3. Gradually add ice water until dough forms. Wrap in plastic wrap and chill for at least 30 minutes.
  4. For the Filling: Preheat your oven to 375°F (190°C).
  5. Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash.
  6. In a skillet over medium heat, sauté onion and garlic until translucent.
  7. Add ground beef or turkey; cook until browned. Season with thyme, nutmeg, salt, and pepper.
  8. Combine mashed potatoes with meat mixture; mix well.
  9. Assembling the Pie: Roll out half of the chilled crust into a pie tin.
  10. Fill with meat and potato mixture.
  11. Roll out the remaining crust to cover the top. Seal edges by pinching together; cut slits for steam ventilation.
  12. Bake for 45-50 minutes until golden brown.
