- 4 bone-in chicken thighs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 garlic cloves, whole
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
- Pat the chicken thighs dry and season generously with salt and pepper.
- In a large oven-safe skillet over medium-high heat, add olive oil. Sear chicken skin-side down for about 5 minutes until golden brown. Flip and remove from skillet temporarily.
- In the same skillet, add garlic cloves and sauté for about 1 minute until fragrant.
- Pour in chicken broth and scrape browned bits from the bottom of the skillet.
- Add heavy cream, lemon juice, rosemary, thyme, and parsley; stir well to combine.
- Return chicken thighs to the skillet along with any accumulated juices.
- Transfer skillet to preheated oven and bake for 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (74°C).
- Let rest for 5 minutes before serving.
