Ingredients

  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 garlic cloves, whole
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
  2. Pat the chicken thighs dry and season generously with salt and pepper.
  3. In a large oven-safe skillet over medium-high heat, add olive oil. Sear chicken skin-side down for about 5 minutes until golden brown. Flip and remove from skillet temporarily.
  4. In the same skillet, add garlic cloves and sauté for about 1 minute until fragrant.
  5. Pour in chicken broth and scrape browned bits from the bottom of the skillet.
  6. Add heavy cream, lemon juice, rosemary, thyme, and parsley; stir well to combine.
  7. Return chicken thighs to the skillet along with any accumulated juices.
  8. Transfer skillet to preheated oven and bake for 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (74°C).
  9. Let rest for 5 minutes before serving.
