- 3 medium-sized beets, peeled and cubed
- 3 medium-sized turnips, peeled and cubed
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with nonstick spray.
- Peel the beets and turnips using a vegetable peeler. Chop them into bite-sized cubes.
- In a large mixing bowl, combine the cubed beets and turnips with olive oil, salt, pepper, and chopped thyme. Toss until all pieces are well-coated.
- Spread the veggie mixture evenly on the prepared baking sheet. Roast for about 30-35 minutes or until tender and caramelized.
- Remove from the oven and let cool slightly before transferring to a serving dish. Optionally, drizzle with additional olive oil for enhanced flavor.
