Ingredients

  • 2 cups butternut squash, diced
  • 2 cups Brussels sprouts, halved
  • 2 cups carrots, sliced
  • 1 cup red onions, chopped
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 8 oz halloumi cheese, sliced into thick slabs
  • 3 tablespoons za’atar spice blend

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper for easy cleanup.
  2. Toss butternut squash, Brussels sprouts, carrots, and red onions in a large bowl with olive oil. Season generously with salt and pepper. Spread the veggies onto one prepared baking sheet.
  3. Slice halloumi cheese into thick slabs (about half an inch) and arrange on the second baking sheet.
  4. Sprinkle za’atar spice blend evenly over both the veggies and halloumi slices.
  5. Place both baking sheets in the preheated oven. Roast for about 25-30 minutes until vegetables are tender and halloumi is golden brown. Flip halfway through for even cooking.
  6. Transfer roasted vegetables and halloumi to plates or a serving platter. Drizzle with extra olive oil or sprinkle fresh herbs as desired.
