- 2 cups butternut squash, diced
- 2 cups Brussels sprouts, halved
- 2 cups carrots, sliced
- 1 cup red onions, chopped
- 3 tablespoons olive oil
- Salt and pepper to taste
- 8 oz halloumi cheese, sliced into thick slabs
- 3 tablespoons za’atar spice blend
Instructions
- Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper for easy cleanup.
- Toss butternut squash, Brussels sprouts, carrots, and red onions in a large bowl with olive oil. Season generously with salt and pepper. Spread the veggies onto one prepared baking sheet.
- Slice halloumi cheese into thick slabs (about half an inch) and arrange on the second baking sheet.
- Sprinkle za’atar spice blend evenly over both the veggies and halloumi slices.
- Place both baking sheets in the preheated oven. Roast for about 25-30 minutes until vegetables are tender and halloumi is golden brown. Flip halfway through for even cooking.
- Transfer roasted vegetables and halloumi to plates or a serving platter. Drizzle with extra olive oil or sprinkle fresh herbs as desired.
