Description

Chicken Waldorf Salad Wraps are a flavorful blend of tender chicken, crisp apples, and crunchy walnuts enveloped in a creamy dressing, making for a deliciously healthy lunch option.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium fresh apples, diced (Granny Smith or Honeycrisp)
  • 1 cup seedless grapes, halved (red or green)
  • 2 celery stalks, finely chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup dried cranberries (unsweetened if preferred)
  • 1 cup Greek yogurt
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. 1. Bring a pot of water to a boil. Add boneless chicken breasts and cook for about 15-20 minutes until no longer pink inside.
  2. 2. Once cooked, allow the chicken to cool slightly before shredding or chopping it into bite-sized pieces.
  3. 3. In a large bowl, combine shredded chicken, diced apples, halved grapes, chopped celery, walnuts, and cranberries.
  4. 4. In a separate bowl, mix Greek yogurt, lemon juice, salt, and pepper until smooth.
  5. 5. Pour the dressing over the salad mixture and gently toss until all ingredients are coated.
