- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium fresh apples, diced (Granny Smith or Honeycrisp)
- 1 cup seedless grapes, halved (red or green)
- 2 celery stalks, finely chopped
- 1/2 cup walnuts, roughly chopped
- 1/2 cup dried cranberries (unsweetened if preferred)
- 1 cup Greek yogurt
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- 1. Bring a pot of water to a boil. Add boneless chicken breasts and cook for about 15-20 minutes until no longer pink inside.
- 2. Once cooked, allow the chicken to cool slightly before shredding or chopping it into bite-sized pieces.
- 3. In a large bowl, combine shredded chicken, diced apples, halved grapes, chopped celery, walnuts, and cranberries.
- 4. In a separate bowl, mix Greek yogurt, lemon juice, salt, and pepper until smooth.
- 5. Pour the dressing over the salad mixture and gently toss until all ingredients are coated.
- 6. Lay out whole wheat or spinach tortillas. Spoon generous portions of the Chicken Waldorf salad mixture onto one side of each tortilla.
- 7. Roll tightly from one end to another to encase the filling.
- 8. Cut each wrap into halves or quarters and serve immediately.
