Description

Blackberry Pistachio Dream Bars are a deliciously sweet treat featuring a buttery graham cracker crust, juicy blackberries, and crunchy pistachios. Perfect for any occasion or casual snacking!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 2 cups fresh blackberries
  • ½ cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with nonstick spray or line with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking dish.
  4. In another bowl, whisk together eggs, vanilla extract, and granulated sugar until smooth.
  5. Gently fold in fresh blackberries without crushing them too much.
  6. Pour the blackberry mixture evenly over the crust.
  7. Sprinkle chopped pistachios on top of the filling.
  8. Bake for about 25-30 minutes or until set and lightly golden on top.
  9. Allow to cool completely in the pan before cutting into squares.

Keywords: For added flavor, consider using almond extract instead of vanilla. You can substitute fresh blackberries with blueberries or raspberries for a different twist. Ensure bars are slightly jiggly when removing from the oven for a chewy texture.
