Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with nonstick spray or line with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of the prepared baking dish.
- In another bowl, whisk together eggs, vanilla extract, and granulated sugar until smooth.
- Gently fold in fresh blackberries without crushing them too much.
- Pour the blackberry mixture evenly over the crust.
- Sprinkle chopped pistachios on top of the filling.
- Bake for about 25-30 minutes or until set and lightly golden on top.
- Allow to cool completely in the pan before cutting into squares.
