  • 4 (6 oz each) Salmon Fillets
  • 1 lb Brussels Sprouts, halved
  • 3 tbsp Olive Oil
  • 2 tbsp Honey
  • 2 tbsp Dijon Mustard
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • ½ tsp Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil and spray lightly with nonstick cooking spray.
  3. In a small bowl, mix olive oil, honey, Dijon mustard, garlic powder, salt, and pepper. Brush this marinade generously over each salmon fillet.
  4. Trim any brown ends off the Brussels sprouts and cut them in half lengthwise. Toss them in olive oil along with salt and pepper until well coated.
  5. Place seasoned salmon fillets skin-side down on one side of the baking sheet. Arrange Brussels sprouts on the other side in a single layer.
  6. Bake for about 15-20 minutes or until the salmon flakes easily with a fork and Brussels sprouts are tender and slightly crispy.
  7. Transfer to plates and drizzle any remaining sauce from the baking sheet over everything before serving.
