  • 1 cup almonds
  • 1 cup cashews
  • 1 cup chopped onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup breadcrumbs (fresh or dried)
  • 2 large eggs (or flax eggs for vegan option)
  • 2 tsp fresh thyme
  • 2 tsp fresh rosemary

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan with olive oil or line it with parchment paper.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onions until translucent. Add diced carrots and celery; cook until softened.
  3. In a large bowl, combine sautéed vegetables with mixed nuts, breadcrumbs, herbs, salt, pepper, and eggs. Stir thoroughly until combined.
  4. Transfer the nut mixture into the prepared loaf pan. Press down firmly to hold its shape while baking.
  5. Place your loaf pan in the preheated oven and bake for about 45-50 minutes, or until golden brown on top.
  6. Once baked, remove from the oven and allow it to cool for about ten minutes before slicing. This helps maintain its form when serving.
