- 4 large bell peppers (red, yellow, or green)
- 1 lb lean ground chicken
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice (white or brown)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Wash the bell peppers, cut off the tops, and remove the seeds. Place them upright in the prepared baking dish.
- In a large skillet over medium heat, add 1 tbsp olive oil and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant. Then, add the ground chicken along with cumin and chili powder. Cook until browned and fully cooked through, about 5 minutes.
- Stir in the cooked rice and half of the shredded cheese into the chicken mixture. Mix until well combined, then season with salt and pepper to taste.
- Generously fill each bell pepper with the chicken mixture until they are overflowing. Top each with the remaining shredded cheese.
- Cover with aluminum foil and bake for about 25 minutes. Remove foil during the last five minutes to allow cheese to become bubbly and golden brown.
- Allow to cool slightly before serving.
