- 2 ripe avocados, diced
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas under cold water until clean. Allow them to dry.
- Dice the avocados and slice the cucumber into half-moons. Halve the cherry tomatoes.
- In a large bowl, combine chickpeas, diced avocados, cucumber slices, halved tomatoes, and red onion.
