  • 2 medium yellow onions, chopped
  • 3 large carrots, cut into chunks
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 3 sprigs fresh thyme
  • 2 tbsp olive oil

Instructions

  1. 1. Prepare Your Ingredients: Chop the onions and carrots into sizeable chunks and mince the garlic.
  2. 2. Sear the Ribs: In a large Dutch oven over medium-high heat, heat olive oil until shimmering. Season short ribs with salt and pepper, then sear each side for about 4 minutes until browned. Remove and set aside.
  3. 3. Sauté the Vegetables: In the same pot, add chopped onions and carrots to the leftover fat. Sauté for about 5 minutes until softened; add minced garlic and cook until fragrant.
  4. 4. Add Broth and Herbs: Return short ribs to the pot along with fresh thyme. Pour in beef broth to cover halfway.
  5. 5. Braise: Cover the pot and transfer it to a preheated oven at 325°F (165°C). Braise for approximately 3 hours or until fork-tender.
  6. 6. Serve: Plate each rib and drizzle with sauce. Serve alongside creamy mashed potatoes or polenta.
