Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup water
  • 1 cup fresh raspberries (or frozen)
  • 1/2 cup dark chocolate chips
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with cupcake liners.
  2. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
  3. Add melted butter and eggs to the dry ingredients, mixing continuously. Gradually stir in water until the batter is smooth.
  4. Pour half of the batter into each muffin cup. Add a few raspberries and sprinkle chocolate chips over them. Top with more batter until each cup is about three-quarters full.
  5. Bake for 15–18 minutes or until slightly firm but still soft in the center. Let them cool briefly before removing from the tin.
  6. Dust with powdered sugar before serving.
