  • 3 lbs potatoes (Russet or Yukon Gold)
  • 2 cups heavy cream
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Peel (if desired) and thinly slice the potatoes using a sharp knife or mandoline slicer for uniformity.
  3. In a mixing bowl, combine heavy cream, minced garlic, salt, pepper, and half of the cheese blend. Stir until smooth.
  4. In the prepared baking dish, layer half of the sliced potatoes. Pour half of the creamy mixture over them. Repeat with the remaining potatoes and sauce.
  5. Sprinkle the remaining cheese on top along with panko breadcrumbs mixed with melted butter.
  6. Cover loosely with aluminum foil and bake for about one hour. Remove foil during the last fifteen minutes to achieve a golden-brown finish.
  7. Allow the dish to cool slightly before serving.
