- 4 medium Russet potatoes
- 1 tablespoon olive oil
- Salt, to taste
- 1 cup shredded sharp cheddar cheese
- ½ cup chopped cooked bacon (or crispy prosciutto for a variation)
- ½ cup sour cream
- ¼ cup sliced green onions
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes under running water and dry. Poke holes in each potato with a fork.
- Place potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes until tender when pierced with a fork.
- Allow baked potatoes to cool slightly, then slice in half lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
- Brush each hollowed potato skin with olive oil and sprinkle with salt.
- Preheat oven to 425°F (220°C).
- Fill each potato skin with shredded cheddar cheese and chopped bacon bits.
- Return filled skins to the oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Remove from oven and top with sour cream and sliced green onions.
