Description

Ingredients

  • 4 medium Russet potatoes
  • 1 tablespoon olive oil
  • Salt, to taste
  • 1 cup shredded sharp cheddar cheese
  • ½ cup chopped cooked bacon (or crispy prosciutto for a variation)
  • ½ cup sour cream
  • ¼ cup sliced green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes under running water and dry. Poke holes in each potato with a fork.
  3. Place potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes until tender when pierced with a fork.
  4. Allow baked potatoes to cool slightly, then slice in half lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
  5. Brush each hollowed potato skin with olive oil and sprinkle with salt.
  6. Preheat oven to 425°F (220°C).
  7. Fill each potato skin with shredded cheddar cheese and chopped bacon bits.
  8. Return filled skins to the oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  9. Remove from oven and top with sour cream and sliced green onions.
