- 2 cans (14.5 oz each) diced tomatoes in juice

- 2 tsp pizza seasoning (oregano, basil, etc.)
- 1 cup shredded mozzarella cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for about one minute until fragrant.
- Pour in canned diced tomatoes with their juices and add vegetable broth. Stir well to combine.
- Add pizza seasoning and let the mixture simmer for about ten minutes to meld the flavors.
- Using an immersion blender, blend the soup until smooth. Return to heat and gradually stir in heavy cream until well combined.
- Add shredded mozzarella cheese, stirring until melted and smooth. Taste and adjust seasoning if necessary.
