Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes in juice
  • 3 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tsp pizza seasoning (oregano, basil, etc.)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for about one minute until fragrant.
  2. Pour in canned diced tomatoes with their juices and add vegetable broth. Stir well to combine.
  3. Add pizza seasoning and let the mixture simmer for about ten minutes to meld the flavors.
  4. Using an immersion blender, blend the soup until smooth. Return to heat and gradually stir in heavy cream until well combined.
  5. Add shredded mozzarella cheese, stirring until melted and smooth. Taste and adjust seasoning if necessary.
