Description

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 head fresh garlic
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste

Instructions

  1. Prepare the Garlic: Preheat your oven to 400°F (200°C). Wrap the garlic head in foil with a drizzle of olive oil and a pinch of salt. Roast for about 30 minutes until soft and golden-brown.
  2. Pressure Cook the Potatoes: Place the potato chunks in the Instant Pot with enough water to cover them slightly. Add a pinch of salt. Secure the lid and set to high pressure for 8 minutes.
  3. Release Pressure: After cooking, carefully perform a quick release on the Instant Pot. Stand back from any steam.
  4. Mash the Potatoes: Drain excess water and return potatoes to the pot. Squeeze in roasted garlic cloves and add butter and heavy cream. Use a potato masher or electric mixer to whip until smooth and creamy.
