Description

Warm your soul with this hearty Sweet Potato Sausage Soup, a comforting blend of sweet potatoes, savory sausage, and vibrant spices. Perfect for chilly evenings!

Ingredients

Scale
  • 2 medium sweet potatoes, diced
  • 1 lb chicken sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the chicken sausage and cook until browned, breaking it into bite-sized pieces.
  2. Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant (about 3 minutes).
  3. Stir in diced sweet potatoes and cook for an additional 5 minutes.
  4. Pour in the chicken broth along with ground cumin and paprika. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes until sweet potatoes are fork-tender.
  5. Stir in fresh spinach until wilted.
  6. Taste and adjust seasoning as needed before serving hot.
