  • 1 lb Brussels sprouts, halved
  • 2 medium sweet potatoes, cubed
  • 4 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 3 tbsp honey
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. 1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. 2. Prepare Chicken: Place chicken thighs on one side of the baking sheet. Drizzle with 2 tbsp olive oil, then season with salt, pepper, garlic powder, and dried thyme. Massage the seasoning into the chicken.
  3. 3. Chop Veggies: On the other side of the baking sheet, add halved Brussels sprouts and cubed sweet potatoes. Drizzle with remaining olive oil and sprinkle with salt and pepper.
