- 1.5 lbs boneless, skinless chicken thighs
- 1 lb Brussels sprouts, halved
- 2 medium sweet potatoes, cubed
- 4 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 3 tbsp honey
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions
- 1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- 2. Prepare Chicken: Place chicken thighs on one side of the baking sheet. Drizzle with 2 tbsp olive oil, then season with salt, pepper, garlic powder, and dried thyme. Massage the seasoning into the chicken.
- 3. Chop Veggies: On the other side of the baking sheet, add halved Brussels sprouts and cubed sweet potatoes. Drizzle with remaining olive oil and sprinkle with salt and pepper.
- 4. Make Honey Garlic Glaze: In a small bowl, whisk together honey and additional garlic powder if desired. Drizzle over both chicken and veggies.
- 5. Roast: Bake in preheated oven for 25-30 minutes until chicken reaches an internal temperature of at least 165°F (75°C) and vegetables are golden brown.
- 6. Serve: Remove from oven and let rest for five minutes before serving directly from the pan or plating individually.
