  • 34 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 3 cloves fresh garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 2 cups dumpling mix (or homemade with 2 cups flour, 2 tsp baking powder, and 1 cup milk)

Instructions

  1. Turn your Instant Pot to sauté mode. Add a splash of oil and sauté minced garlic until fragrant.
  2. Place chicken breasts in the pot and pour in chicken broth. Season with onion powder and thyme.
  3. Secure the lid on your Instant Pot and set it to manual pressure cook on high for about 10 minutes.
  4. While waiting, mix your dumpling batter according to package instructions or prepare your homemade dumpling mix.
  5. Once cooking time is up, carefully release the pressure and check that chicken is cooked through. Shred it in the pot using two forks.
  6. Drop spoonfuls of dumpling batter over the shredded chicken mixture. Close the lid again and cook on high pressure for another five minutes.
  7. Transfer to plates and serve hot.
