- 3–4 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 3 cloves fresh garlic, minced
- 1 cup frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp dried thyme
- 2 cups dumpling mix (or homemade with 2 cups flour, 2 tsp baking powder, and 1 cup milk)
Instructions
- Turn your Instant Pot to sauté mode. Add a splash of oil and sauté minced garlic until fragrant.
- Place chicken breasts in the pot and pour in chicken broth. Season with onion powder and thyme.
- Secure the lid on your Instant Pot and set it to manual pressure cook on high for about 10 minutes.
- While waiting, mix your dumpling batter according to package instructions or prepare your homemade dumpling mix.
- Once cooking time is up, carefully release the pressure and check that chicken is cooked through. Shred it in the pot using two forks.
- Drop spoonfuls of dumpling batter over the shredded chicken mixture. Close the lid again and cook on high pressure for another five minutes.
- Transfer to plates and serve hot.
