- 2 ripe pears, diced (preferably Bartlett or Anjou)
- 2 cups fresh spinach, chopped
- 4 thick-cut boneless pork chops (1 inch thick)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine crumbled Gorgonzola cheese, diced pears, and chopped spinach. Mix until well incorporated.
- Preheat your oven to 400°F (200°C).
- Using a sharp knife, create a pocket in each pork chop by slicing them horizontally.
- Generously stuff each chop with the pear and Gorgonzola mixture.
- Season both sides of each stuffed chop with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat and sear each chop for about three minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about fifteen minutes or until the internal temperature reaches at least 145°F (63°C).
- Carefully remove from the oven and let rest for five minutes before serving.
