Ingredients

  • 4 oz Gorgonzola cheese, crumbled
  • 2 ripe pears, diced (preferably Bartlett or Anjou)
  • 2 cups fresh spinach, chopped
  • 4 thick-cut boneless pork chops (1 inch thick)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine crumbled Gorgonzola cheese, diced pears, and chopped spinach. Mix until well incorporated.
  2. Preheat your oven to 400°F (200°C).
  3. Using a sharp knife, create a pocket in each pork chop by slicing them horizontally.
  4. Generously stuff each chop with the pear and Gorgonzola mixture.
  5. Season both sides of each stuffed chop with salt and pepper.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat and sear each chop for about three minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for about fifteen minutes or until the internal temperature reaches at least 145°F (63°C).
  8. Carefully remove from the oven and let rest for five minutes before serving.
