Ingredients

  • 2 store-bought flatbreads (or homemade equivalent)
  • 2 large sweet yellow onions, thinly sliced
  • 4 oz soft goat cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme leaves, chopped (plus extra for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and place a pizza stone inside if you have one.
  2. In a skillet over medium heat, add olive oil and sliced onions.
  3. Cook, stirring occasionally, for about 10-15 minutes until the onions are softened and golden brown.
  4. Once caramelized, remove from heat and stir in thyme.
  5. Spread goat cheese evenly over each flatbread.
  6. Layer the caramelized onions on top of the cheese.
  7. Place flatbreads on baking sheets or directly on the heated pizza stone.
  8. Bake for 8-10 minutes until warm and slightly crispy.
  9. Remove from oven, let cool slightly, then slice into pieces.
  10. Garnish with extra thyme if desired and serve immediately.
